It’s autumn again and that means the apple harvest has begun. Actually the harvest season varies from apple to apple. Anyway, the harvest has become equated with fall. Apple pie has become, along with pumpkin pie, a staple of Thanksgiving. But there are many more ways to consume apples than in pie or cider.

It’s an oldie, but a goodie…and an easy. Did you know that more acidic apples will render a finer purée? So if you’re looking for lumps and a more heterogeneous sauce, pick apples that are less acidic such as Red Delicious.

Why let apple sauce be the only apple product to spread on some bread? The roots of apple butter lie in Germany during the Middle Ages. Back then some genius realized that long, slow cooking of apples with cider or water to the point where the sugar in the apples caramelizes, creates a delectable, deep brown substance. From there, apple butter came across the Atlantic with colonists and has since become a staple of a number of American regional cuisines.
